Quick and simple dinner

As I sit here typing this, I am waiting on some whipped cream to go through a filter on top of a graduated cylinder.  Summer school is in session!!

This semester brings a food science class and I have been so excited to do the labs, but they have been time consuming! Needless to say, dinners have been short and to the point.  Especially since measuring 3 different types of sugar and measuring flour about 5 different times doesn’t go as quickly as one would imagine!

So having a quick dinner can make the difference in how much time I have to study and complete my homework.  This recipe is quick, simple and fairly nutritious!

The only down side is that it uses store-bought italian bread, which tends to either lack any whole grains or contains high fructose corn syrup. So if you have time, make a loaf of bread ahead of time or just choose what you think is best. Getting in a nutritious dinner can be hard to do with everything going on, so hopefully having something you can fall back on with a simple trip to the grocery store will save you from grabbing any fast food before that soccer game/concert/movie/study session.

This recipe is a win-win!!  Everyone is satisfied, there is little to clean up and it is quick and easy to make.  Add this to your menu this week!

Hamburger Mushroom Pizza

Serve with a side salad and some fresh fruit for a complete meal.

  • 1  (16-ounce) loaf unsliced Italian bread
  • 1/2  cup  traditional bottled pizza sauce
  • 8  (1/8-inch-thick) slices onion, separated into rings (I cut it into smaller, more edible pieces)
  • 1  cup  presliced fresh mushrooms
  • 6  ounces  ground lean beef
  • 1  teaspoon  dried Italian seasoning
  • 1/2  teaspoon  garlic powder
  • 1/4  teaspoon  crushed red pepper (more to taste)
  • 1 1/2  cups  (6 ounces) preshredded pizza double-cheese (a blend of part-skim mozzarella and cheddar cheese) – (I just used mozzarella)


Preheat oven to 500°.

Cut bread loaf in half horizontally. Place both halves of bread, cut side up, on a large baking sheet. Spread 1/4 cup pizza sauce over each half of bread. Divide onion rings and mushrooms evenly between bread halves. Crumble beef into 1/2-inch pieces, and divide beef evenly between bread halves. Sprinkle Italian seasoning, garlic powder, and red pepper evenly over each pizza, and top each with 3/4 cup cheese.

Bake at 500° for 9 minutes or until beef is done and cheese melts. Cut each half into 3 equal pieces.

Makes 6 servings.
